Simple Chia Seed Pudding

If you have never had chia seed pudding before…you need to have it as soon as possible.  It is that good. And one of the best parts of having chia seed pudding is that it is VERY quick and easy to make. This dessert is light, sweet and a nice substitute for ice cream or packaged pudding- I’ve even had it for breakfast before.

WebMD states chia seeds “contain healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium.” So this little pudding will be packing quite a bit of a nutritious value when consumed! Packing Tips for the Procrastinator

Anytime I bring my suitcase out of the closet, my mood immediately improves (even though I’m most likely already in a good mood before I find my suitcase). My tiny suitcase (which actually fits the size restrictions for a carry-on bag) has scuff marks and dirt on the fabric from being tossed around different airplanes, trekking through rain, and enduring dirt being splattered on it. Yet despite its physical lack of beauty, my suitcase represents the new journey about to begin, and the endless possibilities that await- because of course every time that suitcase comes out, that means I’m on my next adventure!

Kale Salad

In an effort to whip up an appetizing and filling lunch before I needed to run some errands, I decided to use fresh ingredients I had at home instead of a prepared package meal. The following recipe is actually very easy to make and satisfies the hunger pains with many essential nutrients. The main ingredient, kale. is an extremely nutrient-packed vegetable- I’m going to write up an entire post just about the benefits of eating/drinking kale so look for it soon!

Learning from the Changing of the Seasons

It's officially fall!
Falling for this new season we are entering.

As much as I love the heat of the summer, fall has now arrived, and I am extremely delighted for the next few months. No longer will that mean walking outside into searing humidity and heat. The days will be cool and crisp and the signs of the upcoming holidays will soon show.  Images of being clad in plaid, sitting at bonfires, and hosting marathon movie nights pop into my head.

Perfect Fall Oatmeal

Since the temperature is still at a steady 85 degrees, I thought I would try to bring some “fall atmosphere” into my kitchen this morning. With that in mind, I whipped up a quick bowl of some good old-fashioned oatmeal with fresh apples and spices. And though I may be uncomfortably hot when I try to wear a long sleeve flannel outside, this recipe hits the right spot in terms of feeling like it’s actually fall (even though there are just a few more days until it is officially fall).

First time ever zip-lining last summer. Exhilarating to say the least!

If I walk into a classroom, you will notice that I immediately go to the desks on the farthest left side and sit in the middle of that left side row. This is where I feel most comfortable-possibly because I’m left-handed, but more likely because I don’t like to be the center of attention in the classroom, and I feel like the teacher will somehow not see me and avoid calling on me (side note: I still get called on). This is not to say that I don’t enjoy learning or being engaged in the classroom discussions. But I fear being called on unexpectedly and sounding dumb because whenever that happens, I replay the whole situation over and over in my head, long after everyone has already forgotten it occurred.

Running
Running outside is a great way to get some fresh air and clear your mind.

I have a love/hate relationship with running. I continually crave a good run and the effect it has to clear my mind and reduce stress. However, I’ll start running and once I get to a tiring point, I quickly proclaim to myself that I will never, ever run again. Yet, in a few days time I’m back with my running shoes tied and my mind ready to be cleared. The benefits of a good run just keep me coming back for more. Healthy Frozen Treat

I’m always looking for  a healthy dessert. My desire for sugar unfortunately never wavers, so every day I feel like I am constantly craving some form of dessert. And since most desserts are not healthy, I am finding ways to satisfy my sweet tooth without all of the sugar, calories, and artificial (flavors, preservatives, colors).

I recently found this recipe in the Seventeen Magazine as a simple snack to make that’s filled with protein. And indeed, it is extremely simple and requires only two ingredients. You can enjoy this after a long day at school, or just as a cool treat to beat the heat.
